Most restaurants and foodservice establishments don't know if they are a big or small customer for their broadline foodservice supplier. Here's a quick reference. A Big Fish - Type "A" Accounts (Foodservice Distributors Want to Retain These Clients) 1. Orders at least $4000 per month and $800 per order 2. Has the order ready when called upon 3. Is growing consistently in sales A Small Fish - Type "B" Accounts (Foodservice Distributors Want to Grow these accounts or limit their service level) 1. Orders at least $ 500 per week (1 delivery) and a stronger than average Gross Profit 2. Has the order ready when called upon 3. Does not require more than a quick call to take order and is open to new ideas A Not so Great Fish (Foodservice Distributors will purge their Gross Profit Margin until the account is lost or becomes highly profitable with small orders) 1. Orders Less than $400 per order 2. Never ready with their order If you fall into this last category, consider consolidation of your orders. If your not buying at least $500 per week from your top primary vendors your not likely making enough money to be in the restaurant business. |
